"Headcheese is made by cooking down the pig's head -- including the snout, ears, tongue, eyes and ears. Then you take the cooked meat off the bone and season it, [my aunt Rosie] said. It's really good, she added, enjoying this opportunity to make me uncomfortable.

Don't you remember eating headcheese? she asked me again. I had to admit I had eaten it and did think it was really good. Of course, I only saw the end product, and it was served by the grandmother who made the best tasting foods. . ."
