Flandreau Santee Sioux students use bison as a food source

Young members of the Flandreau Santee Sioux Tribe of South Dakota are learning how to rely on bison, one of the primary sources of food for their ancestors.

The tribe maintains its own herd but considered selling some animals to lower the costs. That's when the South Dakota State University suggested introducing the bison to students at Flandreau Indian School.

The youth are now learning how to prepare food with bison. “I make basic stuff: tacos, enchiladas, spaghetti, lasagna,” senior told the Associated Press.

Bison meat is less fatty than beef.
